Starbuck, Minnesota, United States--On July 1, 1983, the people of Starbuck, Minnesota gathered to witness an amazing feat: members of the Giant Lefse Baking Team (Maurice Amundson, John Gorder, Tilford Jergenson, Luverne Jorgenson, Larry Kittelson, Earl Larson, Chuck Wahlquist, and Maurice Walline) paid a tribute to the Scandinavian delicacy made out of potatoes, flour and butter; the 70-pound piece with a 9-foot diameter set the world record for being the World's Largest Lefse, according to the WORLD RECORD ACADEMY.

"This spring, Starbuck officially opened the Lefse Hall of Fame -- a tribute to a Scandinavian delicacy made out of potatoes, flour and butter," the CBS News says.


"To open a hall of fame meant residents had to think beyond the rolling pins and spatulas. So they harkened back to July 1, 1983, when the town came together for a feat Ole and Lena would be proud of. That's when they created the world's largest piece of lefse.


"They built a giant roller and a giant spatula, and thousands of people showed up to watch. To set the world record, they needed to grill and roll a 70-pound piece with a 9-foot diameter -- and they had to do it without tearing it. The hall of fame has the tape measure and a bucket that gives you an idea of how much it all weighed.


"Afterwards, Gov. Rudy Perpich declared "Lefse Day" in Starbuck. The accomplishment is also in Norway's Schibsted Book of Records, and no one has been able to match it."

The lefse was 9 feet, 8 inches in diameter and is recorded in Norway's Schibsted Book of Records," the official website says.


"Members of the Giant Lefse Baking Team were Maurice Amundson, John Gorder, Tilford Jergenson, Luverne Jorgenson, Larry Kittelson, Earl Larson, Chuck Wahlquist, and Maurice Walline.


"On April 21, 1987, the governor of Minnesota, Rudy Perpich, declared that in celebration of the Lefse Crew's accomplishment, Lefse Dagen would be celebrated annually on May 16 in Starbuck, Minnesota. The legacy of the record setting 9'8" lefse would be honored by citizens of Starbuck willing to "consume ample quantities of lefse" and "emphasize the variety of ways to serve the delicacy", according to the governor."

"The annual date for Lefse Dagen is on May 18, 2024. The Lefse Dagen celebration, which began in 1987, is sponsored by the Starbuck Depot Society and supported by the Starbuck Study Club. This celebration has a twofold purpose: To commemorate the record setting, yet unbroken, world’s largest lefse baked during the Starbuck Centennial Celebration in 1983 by a group of Starbuck Lions," the Starbuck Chamber of Commerce says.


"To hold an open house at the Starbuck Depot Square. The site where the 70 pound lefse with a diameter of 9 feet 8 inches was baked.


"In 2006 the Depot Society commissioned a special photo of the making of the world’s largest lefse and unveiled it to the public during the Lefse Dagen Day celebration."

"Blaine Pederson emailed from Starbuck, Minnesota, last week that Larry Kittelson had died unexpectedly at age 80. When I researched The Last Word on Lefse in 1992, I interviewed six of The Boys of Starbuck, as I called this group nine men who came up with a goofy idea for Starbuck’s first Heritage Days in 1983: Make a lefse so big that it would go into the Norwegian Schibsted Book of Records," the Lefse King says.

"Larry Kittelson could not make it to Gordy’s Cafe for the group interview back in 1992, and I regretted not meeting this baker who had owned the Pastry Shoppe. Larry made the dough for the World’s Largest Lefse — and then reformulated it at the 11th hour when a trial run had failed. Larry was key because, as all lefse makers know, if you don’t have the dough, there ain’t no show.

"When I researched Keep On Rolling! in 2017, I was sad to learn that all The Boys had died, all except Larry. So it was a joy to finally meet him and ask him to tell me the story, for old time’s sake, of the making of the nine-foot, eight-inch monster lefse. "The world's largest lefse was 9 feet, 8 inches in diameter and is recorded in Norway's Schibsted Book of Records."

"Lefse is a traditional soft Norwegian flatbread. It is made with riced potatoes, can include all purpose (wheat) flour, and includes butter, and milk, cream, or lard. It is cooked on a large, flat griddle. Special tools are used to prepare lefse, including a potato ricer, long wooden turning sticks and special rolling pins with deep grooves.


"There are many ways of flavoring lefse. The most common is adding butter and sugar to the lefse and rolling it up. In Norway, this is known as lefse-klenning. Other options include adding cinnamon, or spreading jelly, lingonberries, or gomme on it. Scandinavian-American variations include rolling it with a thin layer of peanut butter and sugar, with butter and white or brown sugar, with butter and corn syrup, or with butter and salt, or with ham and eggs.


"Also eaten with beef and other savory items like ribberull and mustard, it is comparable to a tortilla. Lefse is a traditional accompaniment to lutefisk, and the fish is often rolled up in the lefse.

"The Little Falls and Dakota Depot, also called the Starbuck Depot, is a former railway station in Starbuck, Minnesota. It was in service from 1882 to 1982.


"The depot was listed on the National Register of Historic Places in 2006 for having local significance under the themes of commerce, exploration/settlement, and transportation. It was nominated for its associations with the expansion of rail lines and European settlement into the region, and the growth of Starbuck as an agricultural trade center.


"The depot was restored beginning in 1986 by the non-profit Starbuck Depot Society, and it is now part of an open-air museum.
