Fort Collins, Colorado, United States--The chocolate maker and chocolatier Nuance Chocolate, which roasts ethically sourced cacao beans in-house, sells its own bean-to-bar chocolate including bars, sampler flights, truffles, croissants and traditional French hot cocoa; specialties include the wildflower honey and lavender truffle — made in collaboration with Colorado beekeepers — and the fiery Snake Bite, featuring añejo tequila from nearby distillery Leopold Bros; with 19 varieties of single-origin bars on sale, it sets the world record for having the World’s largest selection of single-origin bars, according to the WORLD RECORD ACADEMY.

"We start by selecting premium cacao beans from ethical sources around the globe, which we gently roast in small batches to develop depth and range. Then we grind them for as many as three consecutive days, creating the ideal balance of flavors, aromas, and textures.

"At some point in the past few years, Nuance Chocolate became what is believed to be the world’s largest maker of single-origin chocolate," the Colorado Sun reports.
"They buy raw cacao beans from small farms and regional collectives. They sort the bad beans from the good, also taking out the twigs and rocks. They roast, grind and mix the cacao (for 90 hours a batch!) before shaping and tempering it, and then wrapping the bars in colorful foil. And they repeat the process, to create a bar made of beans from a single farm or regional collective.
"They don’t flinch at selling chocolate bars for $8, $10, even $15 because that’s the cost of financially supporting small farmers. They pay more for beans, and that’s helping the cacao-producing communities around the world, including West Africa, a region that produces most of the world’s cacao but has a history of unethical labor practices, including child enslavement."

"If you love chocolate (especially dark chocolate), this is a must-visit if you're in the Ft. Collins area. They make their own chocolate from bean to bar, and most (all?) of their products feature single origin chocolate. Chocolate tasting is $10/person - there are several different combinations of chocolate to sample. There is a pretty large selection of single origin chocolate bars for sale as well as house-made truffles and chocolate candy. Definitely worth a stop!"
